Gluten Free Banana and Walnut Muffin Recipe

 

 

 

Bananas make a great partner for brain food walnuts! Try this easy and quick gluten free recipe for a banana walnut muffin!

INGREDIENTS

  • YesYouCan Banana Bread Mix
  • 3 medium eggs
  • 80g melted non-dairy margarine
  • 120g walnuts, chopped
  • 1/2 teaspoon cinnamon
  • 1 mashed banana

    DIRECTIONS

    1. Preheat oven to 160oC (fan forced) or 180oC (conventional).

    2. Line a cupcake tray with patty cases or spray with canola oil.

    3. In a bowl, mix 3 eggs, 170ml water, 80g melted non dairy margarine, 120g chopped walnuts, 1/2 teaspoon of cinnamon and 1 mashed banana with YesYouCan Banana Bread Mixwell and place in the patty cases.

    4. Fold by hand until batter is uniform.

    5. Bake for approx. 20-25 minutes.
