INGREDIENTS:

125g butter

1 teaspoon vanilla essence

3/4 cup sugar

1 medium egg or Vegan Egg Replacer

1 1⁄2 cups YesYouCan Plain Flour

1 teaspoon baking powder

1/2 cups chocolate chips
DIRECTIONS:

Preheat oven to 160°C (fan forced) or 180°C (conventional oven).

Spray an oven tray with vegetable oil or line the tray with baking paper.

With an electric mixer, beat 125g butter, 1tsp vanilla essence, 3/4 cup sugar and an egg on slow speed for 4 minutes.

Add 1 1⁄2 cups YesYouCan plain flour,1 tsp baking powder and 1⁄2 cup chocolate chips mixing with a wooden spoon until it forms a soft dough (you may use your hands).

Roll 1 1⁄2 teaspoons of mixture into balls. Place each ball onto the tray approximately 5cm apart.

Bake for approx. 15-20 minutes or until light brown.

Remove the tray from the oven, leaving the cookies on the tray for 5 minutes then place them on a wire rack to cool.
